Some kids are just like that. I remember SS (the one Barak's age) refusing to eat baby oatmeal... she wanted big kid oatmeal like the other kids were having. Wouldn't touch jarred food... wanted actual pieces of cucumber, or mashed sweet potato that was still lumpy, or pieces of chicken, basically, whatever was on my plate. Of course, NOW she'll happily eat jar food, as long as I'm trying to feed it to her younger sister. Figures, right?
For the pancakes? I just use the first pancake recipe in Joy of Cooking--your basic pancake recipe--but use whole wheat flour, and add one small grated zucchini and a few healthy shakes of parmesan. And leave out the sugar, obviously.
